2020年,臺灣疫情控制得宜,受惠於報復性消費,下半年餐飲營業額達4,108億元,創歷年新高。無論是餐飲經營、從業人員或消費者,在料理創作、空間設計、整體品味、生活美學等面向有許多突出的呈現,追求的不再僅是溫飽,而是可以滿足味蕾、具話題性、並能刺激想像的餐飲體驗。這代表著餐飲上下游將面對更多的挑戰與機會,同時也是餐飲產業如何持續升級、精緻化的課題。

由名廚MINGCHU、集思會展與食力foodNEXT聯手規劃的餐飲產業論壇,將從市場數據、產業現況、未來趨勢等角度切入,以餐飲客群關注主題串聯業界網絡,在探討餐飲產業發展的同時,亦能讓產業互相交流並建立共好的社群。

以「主題演講」為主,結合現場的「交流互動」與活動後的「議題延續」,分別針對「資源整合」、「加工研發」、「模式創新」三個主題進行探討,期盼藉此凝聚餐飲產業人士共同討論議題,促使後續發酵延伸。

In 2020, the epidemic situation of Taiwan is properly controlled. Benefiting from compensatory consumption, the catering turnover in the second half of the year hit a record high of reaching NT$410.8 billion. There are many outstanding achievements in cooking creation, space design, taste, and life aesthetics. The pursuit is no longer just the food itself but an experience that can satisfy the taste buds and create imagination. It means that the catering industry will face more challenges and opportunities and how to keep upgrading and following the trends.

Catering Industry Forum 2021, jointly planned by MINGCHU, GIS. Group, and foodNEXT, will connect the industry network with topics concerned by customers and discuss the development of the catering industry, hoping that it would help industries communicate with each other and expand business opportunities.

Three themes, including "integration," "R&D," and "innovation," will be discussed separately, looking forward to gathering different industries together and stimulating creativity.

資源#有效整合

資源的類型包括異業整合、融資募資、補助貸款等,若運用得當,可以產生一加一大於二的效果,讓事業經營有機會擴張版圖、取得更多機會,亦可維持充沛的現金水位,以面對營業成本提高或營收劇減等各種情況。

The types of resources include cross-industry cooperation, loans, subsidies, etc. If used properly, these can help businesses obtain more opportunities and maintain a sufficient cash level to face various situations such as increased operating costs or decline in revenue.

加工#延伸商機

受疫情影響,餐飲業除轉作外帶外送外,亦紛紛推出料理食材箱與冷凍商品。隨著餐廳經營趨於穩定,餐飲人開始考慮發展加工食品以創造可期營收,這或許是餐飲產業跨界升級的契機,若能掌握食品加工為產業帶來的優勢與潛力,將能帶來雙贏。

Affected by the epidemic, part of the catering industry switched to take-out delivery and began to sell cooking ingredient boxes and frozen products. With the steady growth of the business, the owners are considering developing new processed food markets to create revenue. If the advantages brought by food processing can be seized, this may be an opportunity for the catering industry to upgrade.
